It’s been a very long time, my friends. I now am the mother of a 4-year-old and a 14 month old. Life has been very busy and full of frenetic energy. All those mothers of several boys know exactly what I am talking about. One of my biggest time consumers is that my boys EAT ALL DAY LONG. Now most of you are probably thinking that this means I let them snack too often and they are not eating their meals. Wrong! They eat their meals and snack all day long. So it’s a constant dance of chop, cut, prepare, clean.
We are definitely a family of fruit lovers here, especially my little monster. He’s been known to eat through a box of fruit snacks in a few days flat. I try to buy the fruit leather, which is much healthier, but it can get pricey keeping up with his habit. So I thought I give the homemade kind a try. It’s beyond simple and about as healthy of a snack as it gets.
One thing I’ve discovered in having a boy is that he eats an enormous amount of food throughout the day. He’ll have just finished breakfast 10 minutes before and he’ll be asking for a snack. It’s a little mind blowing that such large quantities of food can fit in that little body. So I am constantly thinking of ways to make his snacking healthier and more varied. One answer…homemade whole wheat cheese crackers.
Some of you may have thought that I forgot about this little blog. I didn’t forget, really. I just became pregnant. And exhausted. And I’m trying to entertain a 2 1/2 year old. Hopefully, I can get back on track. At least until the baby comes. For those of you that haven’t seen, here’s a picture of the little peanut at 12 weeks. I’m 18 weeks now and in 2 weeks I will find out if it’s a boy or girl. Fingers crossed for the girl. Seriously.
Today both K and I were feeling a little restless so we decided to do an outdoor art project. We decided to lay out a big strip of paper and he painted with his feet. And hands. Then he decided to paint his body and clothes as well. He had a lot of fun, even afterward rinsing off with the hose. Here’s some proof.
One thing I absolutely adore about our new house and property is that we have black raspberry bushes in the back. So K and I have been sneaking back there every few days hoping that some will be ripe for the picking! We found a good handful today and it was all I could do to grab a few before he gobbled them up.
For years friends and family have been telling me that I need to open a bakery of my own. Baking is obviously a passion of mine and while I’ve toyed with the idea of starting a business, time spent with my family has always been a bigger priority. The two years that K has been here, I’ve made his birthday cakes and they have really turned out well. I’ll share those in another post!
K and I are big on arts and craft projects. He takes creating very seriously, whether that be in baking or in crafts. It’s so much fun for me to watch him be so focused and calm since he’s normally a giant ball of energy. When he was sick last week and we were looking longingly outside at the sunshine, I had a great idea for a craft. I thought it would be a kind of unconscious motivation for his body to heal more quickly if we made something that could be used outdoors.
